Colorific Salad

Ingredients
  

For the Salad:

  • 1/2 cup craisins
  • 1 cup red peppers chopped
  • 1 cup honey-roasted sesame sticks
  • 1/2 cup chopped pecans
  • 1 cup shredded mozzarella cheese
  • ½ purple onion diced
  • 1 cup English cucumber chopped
  • ½ cup celery diced
  • ½ cup thin-sliced salami chopped
  • 1 head of romaine lettuce chopped

For the Dressing:

  • ½ tablespoon mustard
  • 1 tablespoon plus 1 teaspoon sugar
  • ⅓-½ cup olive oil
  • cup rice vinegar
  • 1 teaspoon onion powder
  • ¼ teaspoon salt
  • Pinch black pepper
  • 1 tablespoon liquid from a pepperoncini jar
  • 1 tablespoon mayonnaise optional

Prepare the Dressing: 

  • Start by making the dressing. Combine all of the ingredients in a blender or a mason jar. Blend (or shake) until the mixture is smooth and emulsified. The result should be a silky dressing with a perfectly sweet, tangy, and savory balance. Set it aside to let the flavors meld while you assemble the salad.

Chop the Ingredients:

  • The key to a great salad is uniformity, so take your time chopping everything into small, bite-sized pieces. This ensures every bite is a medley of flavors and textures. Dice the craisins, red peppers, and cucumbers, slice the onion thinly, and chop the celery finely. Cut the romaine lettuce into manageable pieces that will be easy to pick up with a fork.

Assemble the Salad: 

  • Layer the ingredients in a large salad bowl for a stunning presentation. Start with the chopped romaine lettuce as the base. Then, evenly over the top, scatter the craisins, red peppers, sesame sticks, pecans, cheese, onion, cucumber, and celery. This creates a colorful and inviting visual that will have everyone eager to dig in.

Add the Dressing: 

  • Drizzle the dressing generously over the salad just before serving. Toss everything together gently to coat every ingredient in the flavorful dressing.
