Ham & Potato Crockpot Soup

Ingredients
  

  • 2 large potatoes diced small (peeled or unpeeled — your choice!)
  • 2 cups leftover ham diced
  • 1 cup celery sliced
  • 1 cup carrots shredded or sliced
  • 1 onion diced
  • 4 garlic cloves minced
  • 1 cup frozen corn
  • 4 –5 baby bella mushrooms chopped
  • 1 10.5 oz can cream of chicken soup
  • 1 teaspoon mustard powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon poultry seasoning or dried sage
  • 2 bay leaves
  • 3 –4 cups broth I always use homemade turkey broth, but chicken broth works too!
  • 1 cup frozen peas optional
  • ½ cup heavy cream
  • 1 cup shredded cheddar cheese optional — stir in at the end

Instructions
 

  • Add potatoes, ham, celery, carrots, onion, corn, mushrooms, broth, and seasonings to the crockpot.
  • Stir and add bay leaves.
  • Cook 4 hours on HIGH or 8 hours on LOW.
  • Add heavy cream and optional cheddar during the last 10–20 minutes.
  • Stir in peas.
  • Remove bay leaves and serve with sourdough rolls or a colorful salad.
