15 oz can chickpeas, drained

1-2 Tbsp olive oil or olive oil spray

1/4 tsp kosher salt

1/8 tsp pepper

1/8 tsp chili powder

1/4 tsp paprika

1/4 tsp garlic powder

  • Step 1: Preheat the Oven
  • Preheat your oven to 375°F (190°C). A preheated oven ensures that the chickpeas roast evenly and become perfectly crunchy.
  • Step 2: Drain and Dry the Chickpeas
  • Drain the chickpeas in a colander and pat them dry with a paper towel. Removing as much moisture as possible is critical to achieving that crispy texture. If the chickpeas are too wet, they may steam rather than roast, resulting in a less crunchy snack.
  • Step 3: Season the Chickpeas
  • Mix the drained and dried chickpeas with the spices in a large bowl. Make sure each chickpea is well-coated with the spice mixture. This is where the magic happens—each spice adds a layer of flavor that makes these chickpeas irresistible.
  • Step 4: Arrange on a Baking Sheet
  • Spread the seasoned chickpeas in a single layer on a baking sheet. If you're using olive oil instead of spray, drizzle it over the chickpeas before spreading them out. The single layer ensures that the chickpeas roast evenly without sticking together.
  • Step 5: Roast to Perfection
  • Place the baking sheet in the oven and roast the chickpeas for about 35 minutes. Give the baking sheet a good shake every ten minutes to ensure even roasting. Keep a close eye on them towards the end of the roasting time, as ovens can vary. The chickpeas should be golden brown and crunchy inside, not moist.
  • Step 6: Cool and Store
  • Once the chickpeas are roasted to perfection, remove them from the oven and let them cool completely. As they cool, they will continue to crisp up. Store them in an airtight container to keep them crunchy for up to a week—though they probably won't last that long!
